Sausage, Kale & Potato Soup

Ingredients
3 Italian Sausages (~1/2 pound)
5 Cups Kale (chopped)
3/4 Red Skinned Potatoes (thinly sliced)
1 Small Onion (minced small)
4 cloves of garlic (minced)
4 cups Chicken Broth
1 tsp Smoked Paprika (Optional)
1/4 Ground Caraway seed (Optional)
How to Make It
Remove outer skin of the sausages and sauté sausage in heavy medium saucepan over medium-high heat, break up the sausages into chunks and cook until beginning to brown, about 5 minutes. Add onion, saute until translucent (3-5 mins). Add minced garlic, cook until aromatic (30 seconds or so). Add chicken broth, sliced potatoes, smoked paprika, and caraway seeds and bring mixture to boil. Reduce heat to medium, cover and simmer until potatoes are almost tender, about 10 minutes.
Add kale and caraway seeds to soup. Simmer soup uncovered until potatoes and kale are very tender, about 10 minutes longer. Season soup to taste with salt and pepper. Ladle soup into bowls and serve immediately.
